Historic
records show that folks have been enjoying the great tastes
of tacos for at least 500 years. Modern anthropologists have
discovered evidence that even indicates that inhabitants of
differing Mexican states used a variety of fillings for the
inside of their tacos. While some preferred small fish, other
area residents loaded their taco shells with small live insects
and ants. Still other regions preferred the crunchy flavor
of locusts and snails. (Was a snail taco called a "shell
in the shell"?)
It was not until the early 1900s that an English-language
cookbook published in California featured some contemporary
taco recipes. Americans, however, preferred to add cooked
beef filling to their tacos, forever displacing the previously
popular "bugs in a blanket" taco.
Even centuries ago, folks found taco-making to be challenging,
especially when ants and other little critters deftly made
their way out of the shell and onto the floor. (It's never
easy to watch most of your meal walk out of your home.) And
to think that today we complain about fillings like lettuce,
beef or cheese falling from our tacos!
